I'm Barrie Gibson and I started to make cider about 15 years ago purely for myself, my family and friends.
As word got around, more and more people brought us apples, the quality of our cider got better and better, people started to ask if they could buy some, and we came to think maybe it might be the time to 'go commercial'.
We looked around for a base, and in 2012 we found a small orchard and lovely outbuilding that could be converted into a cidery in Golant, not far from where we live in Fowey. We are now based in Lostwithiel.
Sparkling Vintage Cider
Our Sparkling Vintage Cider is made with a high proportion of dessert apples in the mix to give it that delicious ‘méthode traditionelle’ taste.
The apples are pressed, then fermented twice: first in the barrel for a year; then a second year’s fermentation in the bottle.
The cider is then disgorged in the champagne style and aged further before release. It is the secondary fermentation that gives our cider its wonderful bubbly effervescence; a method invented in the West Country for fine cider making around 1600, well before it was used in France for Champagne.
Our Sparkling Vintage Cider won silver at the 2015 British Cider championships and a 2016 Gold Taste of the West award.
Oak Aged Cider Brandy
We pot distil our Brandy twice from our vintage cider up to 65% ABV.
It's then laid down in new, small, medium toasted, American oak barrels for more than twelve months.
It is a wonderful straw-gold in colour with black cherry and sandalwood on the nose. On the palate are nuts, molasses and raisins with a hint of liquorice and pepper.
