What made you decide to start St. Ives Brewery, and what's the inspiration behind it?
I started St.Ives Brewery 10 years ago in order to bring the visitors and residents a locally brewed range of beer they could be proud of.
What did you do before creating St. Ives Brewery?
I owned a hotel/bar in the centre of St. Ives, which is where I got a taste of the industry. I met people who were so passionate about beer that they would travel around the country seeking out the best, new brews. This is where my love for beer grew into a business.
How are the beers made, what are the ingredients and where are they sourced from?
We source the finest grain from Warminster malt, hops from around the world through Charles Farnham, Cornish spring water and a special house yeast. The quality of ingredients is so important. We seek out the best we can buy, making sure we do not substitute quality for cost. We trade with ethical producers where possible and work hard to meet our goal of becoming carbon neutral.
Where does your inspiration come from?
We are super passionate about great beer. Our love of beer keeps us innovating and learning. The changing nature of people’s tastes and trends in the market make us eager to seek out new ways to produce beer. The craft beer scene has evolved rapidly in the last five years and we’re eager to try and stay ahead of the trends.
What have been the biggest challenges/achievements, or your favourite story on your journey so far?
The brewing world has faced some huge challenges in the past few years. Cask beer has been an increasingly competitive market to trade in and the retail price has seemed to drop rather than increase. Pubs have demanded price cuts and many breweries have obliged. This has seen a reduction in quality and a number of breweries going out of business. COVID has also been a huge challenge for the industry that is still unfolding. We’ll wait to see what will happen in the pub landscape during the coming months.

What's your favourite beer from your range?
Our newest beer DAWN NEIPA (New England India Pale Ale) is a 6% juicy beer that is heavily hopped and packaged in 440ml cans. We treat this beer with care and take extra steps to increase its hop content. This is a sign of things to come for us over the next few years.
What is your connection to Cornwall?
Our roots are here. The harbour is on our doorstep. The view from our cafe above the brewery is of the harbour and out towards Godrevy lighthouse. We can check the surf while at work, which can be a huge distraction at times, but also keeps us focused on why we do what we do.
Do you have a special spot in Cornwall that inspires you?
I am most at peace when surfing at Porthmeor or Porthleven. The two places have given me immense pleasure over the years. If we are not in the sea then when I am alone in the brewery with a new beer to try is when I am happiest. There is a lot of work to do in the brewery but tasting the fruits of the labour is a true pleasure.
What's next / any exciting plans?
We are really excited about the plans in the coming months/years. We have big plans to expand the brewery here in St.Ives. The goal to become carbon neutral is firmly in our sights. We won’t stop until this is a possibility.
